Traditional fillo has a new twist with the flaky texture of shredded fillo dough ("kataifi" in Greek). Roll it, layer it, fold it, wrap it, form it into birds' nests or shells...no matter how you shape kataifi, it becomes something special. In addition, kataifi contains no cholesterol!
