SPICED APRICOT TART

Ingredients
1/2 cup dried apricots
2/3 cup water
2 teaspoons granulated sugar
1/4 teaspoon cinnamon
15 Athens® Mini Fillo Shells (1 box)

In a small pan, combine apricots, water, sugar and cinnamon. Simmer for 10 minutes until plump. Remove apricots with a slotted spoon. In a food processor, puree half of the apricots. Coarsely chop the remaining apricots. In a small bowl, combine the pureed and chopped apricots. Chill for 1 hour. Spoon 1 rounded teaspoon of filling into each Fillo Shell. Serve immediately.
