SWEET POTATO TART  Ingredients 1 tsp. canola oil 3/4 cup sweet potatoes, cooked, mashed 1 tsp. butter 2 tsp. milk 2 tsp. pancake syrup Salt to taste 15 Athens® Mini Fillo Shells (1 box) 2 tablespoons ground walnuts, for garnish In small bowl, combine all ingredients except Mini shells and walnuts. Whip until smooth.
Spoon or pipe about 2 tablespoons of filling into each Fillo Shell. Garnish with ground walnuts.
Bake at 350°F for 15 minutes. Serve warm.
Alternate Garnish
2 teaspoons vegetable oil
1/4 cup julienne-cut onions
In a small skillet, heat oil over medium heat and slowly saute onions until fully carmelized and dark brown.
