Description

For a vegetarian app that marries fresh blueberries with savory flavors, make these blueberry-thyme goat cheese phyllo cups. Recipe & photo by food photographer Doaa Elkady (@asoulfulkitchen).

Ingredients
  • ½ cup blueberries
  • 1 tablespoon sugar
  • 1 tablespoon thyme leaves, picked
  • 4 ounces goat cheese
  • 4 ounces cream cheese
  • 2 packages (15 count, each) of Athens® Phyllo Shells
  • Honey, for drizzling
  • Thyme sprigs, for garnish

Directions

Preheat the oven to 350°F. In a bowl, mix the blueberries with sugar and thyme leaves. Transfer to a small, oven-safe tray and roast for 10 minutes.

Whip the goat cheese and cream cheese together, then transfer to a piping bag for ease of use. Fill each phyllo shell ⅔ full of the cheese mixture, then top with a teaspoon of blueberries. Drizzle with honey to taste and garnish with a small sprig of thyme.
