Ingredients
30 sheets Athens® Phyllo Dough (9″x14″), thawed
2 cups almond flour
1 cup bread crumbs, unseasoned
1/2 cup dark brown sugar
1 teaspoon cinnamon
1/2 cup sliced almonds + additional for garnish
1/2 cup dried cherries, coarse chopped
1/2 tablespoon vanilla extract
1/3 cup espresso + 2 tablespoons for glaze
1 stick unsalted butter, melted
1 cup confectioners sugar
Directions
Thaw two rolls of phyllo, following thawing instructions on package. Preheat oven to 375F.
In a large bowl whisk together almond flour, bread crumbs, brown sugar and cinnamon. Stir in 1/2 cup almonds, dried cherries, vanilla and 1/3 cup espresso. Set aside.
Unroll and cover phyllo with plastic wrap, then a slightly damp towel to prevent drying out. Brush a 9″or 10″ pie pan or similar size baking dish with butter.
Place a stack of 3 phyllo sheets horizontally on work surface. Brush top sheet with butter. Sprinkle 1/4 cup of filling across bottom half of phyllo. Fold top half down to cover filling. Gently press down. Brush butter on top, sprinkle another 1/4 cup on bottom half of phyllo, fold top down and gently press. You should now have a filled strip approximately 2″ x 14″. Starting from one short end, gently roll strip to create a spiral. Place in baking dish and brush with butter. Repeat process to create 9 or 10 spirals (depending on size of pan) fitting them snugly in baking dish. Do not use more than 1/4 cup of filling each time or the spirals will burst. Pour any remaining butter across the top. Sprinkle with additional almonds. Bake for 30 minutes or until golden on top and baked through.
Make glaze while spirals are baking. In a small bowl whisk together confectioners sugar + 2 tablespoons espresso. Let stand at least 5 minutes. Remove spirals from oven and immediately drizzle with glaze.
Allow spirals to rest at least 10 minutes before removing from the baking dish. Enjoy.
Tips
-For a stronger coffee flavor, add 1 tablespoon of instant Espresso Powder (such as Delallo brand) to the glaze. This can be found in your grocer’s baking aisle.
