Whipped Goat Cheese w/ Bosc Pear and Honey

Ingredients
  • 1 package (15 count each) Athens Original Flavor Phyllo Shells
  • 1 log soft goat cheese
  • 1/4 cup heavy cream
  • 2 Bosc pears
  • 2 tbl chopped chives
Recipe
  • Using electric mixer, whip goat cheese and heavy creme until stiff peaks formed
  • Chop pears into small cubes
  • Scoop whipped goat cheese into individual phyllo shells
  • Top with pear, sprinkle with chopped chives, and a small drizzle of honey

Tuna Tartar & Salmon Roll in Cheesy Phyllo Ring

Ingredients
  • 2 Sheets Athen Phyllo dough
  • 4 Tablespoons Parmesan cheese
  • 8 oz Tuna
  • 4 oz Strawberry
  • 1/2 teaspoon Crashed hot chili pepper
  • 1 teaspoon Cilantro, chopped
  • 1/4 teaspoon Shallot, fine chopped
  • 4 oz Avocado
  • 1/4 teaspoon Wasabi paste
  • 1/4 teaspoons lime juice, lemon juice and zest
  • 8 oz Salmon
  • 5 oz Cream cheese
  • 4 teaspoons Capers
  • 2 teaspoons Red and green onion, fine chopped
  • 3 tablespoons Mustard Curry Aioli
  • 2 oz Mushroom, small diced
  • 2 tablespoons Blue cheese crumble
  • 4 tablespoons Balsamic glaze
Recipe
  1. Preheat oven 350℉. Spray vegetable oil on dough then sprinkle Parmesan. Put another dough on it then take same process for all to make 4 layers dough.
  2. Prepare 3 different size metal round mold, spray vegetable oil around then cut dough into strip to roll around mold, bake10 minutes until golden brown, remove from oven and mold then cool down.
  3. Cook mushroom then cool down, add blue cheese crumble, fill in small mold.
  4. Mix avocado, cream cheese, wasabi paste, salt, lime juice and zest well to be smooth paste.
  5. Cut tuna into small dice then place into bowl. Add salt, cilantro, crushed hot chili pepper, shallot, olive oil, lime juice and zest then toss.
  6. Mix cream cheese, red onion, capers, green onion, lemon juice and zest.
  7. Slice salmon thin then put cream cheese mixture then roll up.
  8. Drizzle sauce on plate, set large ring and salmon on aioli, fill tuna tartar middle and mushroom in small ring on balsamic glaze then serve.

Herbed Ricotta & Asparagus Phyllo Tart

Isn’t it a nice kind of kitchen magic when something exceptionally easy happens to be so exceptionally beautiful? This tart is simply layers of phyllo dough brushed with olive oil, spread with a thin layer of herbed ricotta (whole-milk ricotta mixed with a little milk, thyme, and oregano), and topped with asparagus. Finish with flaky salt and bake at 400 degrees for about 20 minutes. Swap the asparagus with anything you want for tomorrow’s dinner: thinly sliced beets or butternut squash or potatoes with rosemary and Parmesan would all be great. #feelingflaky

Ingredients
  • 20 phyllo dough sheets
  • 1/4 cup olive oil (or enough to liberally brush each sheet)
  • 1/2 cup whole milk ricotta
  • 3 tablespoons milk
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon oregano
  • about 40 stalks of asparagus
