Sweet and spicy, this wonderful cherry chutney is a perfect compliment to shredded chicken. A “must have” summer party appetizer or delicious anytime snack!
1 1/2 cups cherries, halved and pitted
1/2 cup onion, chopped 1/4 ”
1/2 cup red bell pepper, diced 1/4 – 1/2″
3 tablespoons light brown sugar
2 tablespoons balsamic vinegar
1/2 tablespoon fresh ginger, minced
1 teaspoon orange zest
1/2 teaspoon ground cardamom
1/8 teaspoon salt
1/8 teaspoon crushed red pepper flakes
2 teaspoons apricot preserves
1 rotisserie chicken, deboned, skinned and shredded
2 packages (15 count, each) Athens® Phyllo Shells
In a medium saucepan, mix together first 11 ingredients and bring to a boil. Lower heat and simmer uncovered, stirring occasionally, 40-45 minutes or until cherries soften and mixture thickens slightly. Remove from heat and cool to room temperature. Spoon chutney into each shell approximately 3/4 full. Top with shredded chicken. Serve at room temperature or chill chutney before assembling and serve cold.
