Description
Black-eyed peas represent coins. Collard greens represent dollar bills. And, phyllo dough makes the crispiest bags to keep them in! These Southern traditional New Year “good luck” foods are delicious anytime of year!
Ingredients
- 24 sheets Athens® Phyllo Dough (9×14”), thawed
- 1/2 cup olive oil, divided
- 1 cup red onion, chopped
- 3 cloves garlic, crushed
- 1 cup smoked ham (approx. 6 oz.), 1/4″cubed
- 16 ounces collard greens, rinsed, stem removed and chopped to 1″ pieces
- 1 teaspoon salt
- 1 teaspoon cracked black pepper
- 1 1/2 cups vegetable or chicken stock
- 2 cans (15.5 oz. each) black-eyed peas, drained
- 3/4 teaspoon lemon juice
- 6 ounces feta cheese, crumbled
- 36 Chives, blanched (optional for tying bags)
Directions
Thaw two rolls of phyllo, following thawing instructions on the package. Preheat oven to 350°F.
In a large skillet heat 2 tablespoons olive oil over medium heat. Add onions and garlic, cooking for 2 minutes until translucent. Stir in ham, continue to cook for another minute then add collard greens gradually, stirring as they begin to wilt. Cover and cook over low heat for 5 minutes. Add salt, pepper and stock. Cover and continue to cook for 10 minutes. Stir in black-eyed peas cooking uncovered over low heat for 5 more minutes. Remove from heat and mix in lemon juice and feta. Set aside.
Unroll and cover phyllo sheets with plastic wrap, then a slightly damp towel to prevent drying out. Lay one sheet of phyllo dough on work surface. Lightly brush with olive oil. Layer and repeat with three more sheets of phyllo. Cut in half lengthwise into two strips 4 1/2″ x 14″. Cut each strip horizontally into thirds yielding six squares approximately 4 1/2″ each. Brush each lightly with oil. Place one heaping tablespoon of filling in center of each square. Bring sides of phyllo up around filling, gently squeezing in the middle above the filling & slightly flattening the bottom, so it will stand upright on it’s own. Place on an ungreased baking sheet about one inch apart. Repeat process with remaining phyllo and filling. Reroll unused phyllo sheets and follow storing instructions on package.
Bake 15-20 minutes or until golden. Tie each money bag with chive (optional). Serve warm on its own or with pickle relish.
