This relish goes great with our Lamb Salad in Phyllo.
- 1 mango, peeled and cut into strips
- 2 scallions, sliced thin
- 2 tomatoes, peeled and cut into strips
- 1 tablespoon olive oil
- Salt and pepper to taste
Mix mango, scallions and tomatoes. Toss with olive oil, salt and pepper. Chill for 1 hour.
