Description
Fresh picked cherries and juicy peaches, our favorite fruits from summer’s harvest, are tossed in brown sugar & cardamom and infused with bourbon. Refreshing perfection in flaky phyllo shells!
Ingredients
1 cup fresh cherries, halved and pitted
1 large peach, fresh, peeled and diced (approximately 1 cup)
2 tablespoons light brown sugar
1 tablespoon bourbon
1/4 teaspoon vanilla
1/4 teaspoon cardamom, ground
1/8 teaspoon salt
1 tablespoon flour
2 packages (15 count, each) Athens® Phyllo Shells
1/4 cup granola, optional for garnish
1/4 cup non dairy whipped topping
Directions
Preheat oven to 350⁰F. Place cherries and peaches in a medium mixing bowl. Gently mix in brown sugar, bourbon, vanilla, cardamom, salt and flour. Spoon fruit mixture into phyllo shells. Place phyllo shells on baking tray with no space between them. Bake 8-10 minutes or until fruit is slightly roasted but not dried out.
Allow to cool. Sprinkle with a pinch of granola (if using) and a small dollop of whipped topping. Serve immediately.

Tips
Not leaving space on baking tray between phyllo shells is to prevent them from spreading too much. Another option is to place shells in a mini muffin tin.
