Description
Roasted jerk shrimp perched on juicy pineapples and veggies in a phyllo shell is a sweet and spicy taste of Jamaica, phyllo style!
Ingredients
30 small shrimp, raw, peeled and deveined
2 teaspoons jerk seasoning, divided
10 ounces pineapple tidbits, drained
3/4 cup red bell pepper, 1/2″-3/4″ diced
1/2 cup red onion, 1/2″-3/4″ diced
1 1/2 tablespoons jalapeño, 1/4″ diced
2 packages (15 count, each) Athens® Phyllo Shells
1/4 cup cilantro, chopped
2 limes, cut into small wedges
Directions
Preheat oven to 400°F.
Toss shrimp gently with 1 teaspoon jerk seasoning, spread in one layer on a tray and set aside.
In a medium bowl, combine pineapple, red pepper, onion, jalapeño and remaining jerk seasoning.
Fill phyllo shells with pineapple mixture. Top each with a shrimp. Place filled shells on a baking tray and bake 20 minutes or until shells are golden and shrimp is pinkish.
Sprinkle with cilantro and serve immediately with lime wedges.
