These phyllo shell desserts put sweetened apricots center stage.
- 1/2 cup dried apricots
- 2/3 cup water
- 2 teaspoons granulated sugar
- 1/4 teaspoon cinnamon
- 1 package (15 count) Athens® Phyllo Shells
In a small pan, combine apricots, water, sugar and cinnamon. Simmer for 10 minutes until plump. Remove apricots with a slotted spoon. In a food processor, puree half of the apricots with two tablespoons cinnamon and sugar cooking liquid. Add more if needed to puree. Coarsely chop the remaining apricots. In a small bowl, combine the pureed and chopped apricots. Chill for 1 hour. Spoon 1 rounded teaspoon of filling into each Phyllo Shell. Serve immediately.
