These mouthwatering puffs are bursting with the classic feel-good flavors of sweet potato, cheddar, bacon and chives in a crispy, flaky shell. They’re super easy to make and guaranteed to be a hit at your next get-together, holiday party, or weeknight snack session.


Ingredients
  • 2 packages (15 count, each) Athens® Phyllo Shells
  • 2 large sweet potatoes, cooked & mashed
  • 3 large eggs, beaten
  • 1 cup cheddar cheese, shredded
  • 3 strips cooked bacon, crumbled
  • 3 tablespoons fresh chives, chopped

Directions

Preheat oven to 400ºF.

In a large bowl, mix together mashed sweet potatoes, eggs, cheese, bacon and chives.

Place phyllo shells on a baking sheet. Spoon filling into each shell, mounding slightly.

Bake for 20 minutes until the tops are very lightly browned.

Serve warm.
