Tropical Triangles With Mango Coconut Sauce

Use your air fryer to make these sweet fruit treats featuring flavors from the tropics wrapped into flaky phyllo turnovers.


Ingredients

1 roll Athens® Phyllo Dough (9″x14″), thawed
1 large mango, ripe, peeled and diced
3 tablespoons cream of coconut
4 ounces honey goat cheese, softened
1/4 cup sweetened coconut
1/4 cup banana, mashed
1 cup marshmallow crème
cooking spray


Directions

Thaw one roll of phyllo, following instructions on package.

Using a blender or food processor, puree mango and cream of coconut into a dipping sauce. Cover and set aside.

In a medium bowl mix together goat cheese, coconut, banana and marshmallow crème. Unroll and cover phyllo sheets with plastic wrap, then a slightly damp towel to prevent drying out. Place one sheet of phyllo on work surface. Spray lightly with cooking spray. Fold into thirds lengthwise yielding a phyllo strip 3″ x 14″. Repeat procedure with remaining sheets of phyllo. Keep the finished strips covered with plastic wrap as you work.

Lay one strip of phyllo on work surface. Spoon 1 heaping tablespoon of goat cheese mixture 3″ from the bottom of strip. Fold 3″ phyllo end over filling then fold lower corner of phyllo diagonally across to opposite edge to form a triangle. Continue to fold triangle onto itself to the end of strip. Repeat process with remaining phyllo strips and filling. Spray lightly with cooking spray. Place triangles in air fryer pan, approximately 1/4″ apart (in batches of about 6 at a time). Cook in preheated 350ºF air fryer 5-7 minutes or until golden. Allow to cool and serve at room temperature with dipping sauce.

Tips

Triangles can be formed and frozen in airtight containers prior to cooking for up to 2 weeks. Do not defrost, cook as instructed above.

No air fryer? No problem. Place triangles on baking sheet. Bake in preheated 375°F 20-25 minutes or until golden brown.
