Description
Blueberries share a flaky phyllo shell with Bisquick mix and a lemon curd topping in these easy-to-make desserts.
Ingredients
- 3 packages (15 count, each) Athens® Phyllo Shells
- 1 pint blueberries
- 1 bottle (10.6 ounce) Bisquick Shake n Pour Mix
- 1/2 cup lemon curd
- 1 tablespoon lemon zest (optional for garnish)
Directions
Preheat oven to 350°F.
Place phyllo shells on an ungreased baking tray. Add water to the Bisquick container and shake as directed on package. Spoon approximately 1 teaspoon of the mixture into each shell or enough to fill the shell ¾ full. Place 3 blueberries into each, slightly pushing down into Bisquick. Bake for 8-10 minutes, or until batter is cooked through. While the shells are still warm, spoon the lemon curd over each.
Garnish with lemon zest or another blueberry on top of the lemon curd. Serve immediately.
