Artichokes, tomatoes, red onions and basil power this salsa that serves as a perfect complement to salmon.


Ingredients
  • 1 cup artichokes, 1/4” diced
  • 1/2 cup tomato, 1/4” diced
  • 1/4 cup red onion, 1/4” diced
  • 2 Tablespoons fresh basil, minced
  • 1 teaspoon dried oregano, whole
  • 1 1/2 Tablespoons capers, 1/8” chopped
  • 1 Tablespoon lemon juice
  • Salt and Pepper, to taste

Directions

In a small glass mixing bowl, combine all ingredients. Refrigerate for 30 minutes. Top salmon with salsa prior to serving.
