Bangers and Mash Phyllo Shells

A touch of the Irish, these easy Bangers and Mash appetizers are a tasty way to celebrate.


Ingredients

3 tablespoons olive oil, divided

2 links fresh pork sausage (approx. 6 ounces)

1 cup onions, thinly sliced

3/4 cup prepared brown gravy

1 1/2 cups prepared garlic mashed potatoes

2 packages (15 count, each) Athens® Phyllo Shells

2 tablespoons curly leaf parsley, chopped (for garnish)


Directions

Preheat oven to 350F. Add 2 tablespoons of olive oil to an oven proof sauté pan. Over medium high heat, add sausage links browning on all sides. Place in oven for 15 minutes or until cooked through (internal temperature of at least 160F).  Remove from oven, cool and slice into 1/4″ thick circles and then cut each circle in half.

Heat remaining oil in a medium sauté pan. Add onions and sauté over high heat until caramelized. Stir gravy into pan and heat.

Note: store bought gravies and mashed potatoes differ greatly. Be sure to taste the gravy and potatoes for flavor before assembling and season to taste if needed (salt, pepper, garlic powder and Worcestershire sauce are great for boosting gravy flavor).

Place phyllo shells in baking tray. Pipe or spoon mashed potatoes into phyllo shells. Insert 2 pieces of sausage in each such that they are standing. Top with onions and gravy. Bake for 8-10 minutes or until heated through.

Sprinkle with parsley and serve.
