Bog & Brie Phyllo Bites

Apricot jam, cranberries, slivered almonds, and brie give these party bites the perfect balance of fruity and savory flavors. Recipe by Nadine L.

  • 2 packages (15 count, each) Athens® Phyllo Shells
  • 1 cup apricot jam
  • 1 bag (12 ounces) fresh or frozen cranberries
  • 1 wheel brie, remove rind if desired for a smoother filling
  • 1/3 cup slivered almonds


Preheat oven to 350⁰F. Spoon ½ teaspoon apricot jam and 2-3 cranberries into each phyllo shell. Cut 30 pats of brie and gently press a few almond slivers into each. Place brie/almond pat on top of cranberries, molding with your fingers to fit. Place 1” apart on a baking sheet. Bake for 8-10 minutes, or until cheese melts.
