Description
These turnovers featuring a flaky Phyllo shell are bursting with the flavors of broccoli, cheddar and cream cheese, and they can be prepared in advance and frozen for simple single servings.
Ingredients
- 1 1/2 cups chopped broccoli, frozen, thawed
- 1 cup cheddar cheese, shredded
- 1/4 cup cream cheese, softened
- 1 tablespoon breadcrumbs
- Salt and pepper, to taste
- 1 package Athens Phyllo® Dough (9″x14″), thawed
- Cooking spray
Directions
Thaw phyllo, following thawing instructions on package. Preheat oven to 350⁰F.
In a medium mixing bowl, thoroughly combine broccoli, cheeses, breadcrumbs and seasoning.
Unroll and cover phyllo with plastic wrap and a damp towel to prevent drying out. Place one sheet of phyllo on work surface and lightly coat with cooking spray. Layer and repeat with 2 more sheets. Do not spray the top layer. Cut the layered phyllo into thirds lengthwise. Place 1 heaping tablespoon of filling about 1” from corner of each layered strip. Fold one corner of phyllo diagonally over the filling to opposite edge to form a triangle. Continue to fold triangle onto itself. Spray the outside of the triangle. Place triangles seam side down on ungreased baking tray at least 1” apart. Repeat with the remaining strips and Phyllo sheets until the filling is used up. Bake for 15-18 minutes or until golden brown. Serve hot.
MAKE AHEAD: Phyllo turnovers can be prepared ahead, wrapped in plastic and frozen. To serve, unwrap and bake per directions, do not defrost first.
