The light and fluffy filling in these simple mini-souffles perfectly offsets the crispiness of the mini Phyllo shell.
- 1/2 cup flour
- 1 3/4 cups milk
- Salt, pepper and nutmeg to taste
- 1/4 cup grated Parmesan cheese
- 1 tablespoon butter
- 4 large egg yolks
- 4 large egg whites
In saucepan over medium heat, mix flour, milk and seasonings together and bring to a boil. Stir continuously. Mixture will become very thick. Remove from heat and stir in Parmesan cheese, butter and egg yolks.
Whip egg whites to stiff peaks and fold into cheese mixture. Immediately spoon into Phyllo shells.
