If you like Middle Eastern desserts with syrups, but find them too intimidating to try to make yourself, then this dessert is for you! With it’s swirled top it looks like a fancy pastry, but is actually a simple dessert made with phyllo dough. This TikTok trending recipe created by our friend Esra from Charmer Kitchen has crispy layers with pillowy soft custard pudding inside.


Ingredients
  • 1 roll of  Athens Phyllo Dough (9″ x 14″), thawed
  • 2 sticks unsalted butter

Custard

  • 1 cup milk
  • 1/4 cup heavy whipping cream
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoon vanilla extract

Syrup

  • 1 cup sugar
  • 1/2 cup water
  • 1 teaspoon freshly squeezed lemon juice

Garnish

  • 1/2 cup chopped pistachios
  • 1 tablespoon rose petals (optional)

Directions

Thaw one roll of phyllo, following thawing instructions on package. Preheat oven to 350°F. Unroll and cover phyllo with plastic wrap and then a slightly damp towel to prevent drying out. In a medium pan, melt butter, and set aside.

Take 2 layers of phyllo dough at a time holding the sheets together at the top and let them hang from your fingers. Using your fingers to “crinkle” the sheets, gently fold them back and forth in an accordion-style drawing from the bottom up to the top and arrange in rows to cover the bottom of the 9′ x 13′ baking pan. 


Place the baking pan in the oven for 10 minutes. Remove the pan and evenly pour butter over the phyllo dough. Place the pan back into the oven for another 10 minutes.

Meanwhile, prepare the custard by whisking together the milk, heavy cream, eggs, sugar, and vanilla extract.

Remove the pan from the oven and pour the custard evenly over the top. Return to oven, and bake until the top is golden and crispy, about 30 minutes.

In a medium saucepan, combine sugar, lemon juice, and water. Bring to a boil over medium heat, stirring until sugar is dissolved, then reduce heat to low and boil an additional 5 minutes without stirring. Remove from heat and let the syrup cool.

Remove the baked phyllo dessert from the oven and let cool slightly for 2 minutes. Drizzle room temperature syrup over the phyllo, and serve with chopped pistachios.
