Description
Too hot in the kitchen? Use your air fryer to make this delicious corned beef, swiss cheese and sauerkraut sandwich wrapped in golden crispy phyllo dough.
Ingredients
5 sheets Athens® Phyllo Dough (9″x14″), thawed
cooking spray
5 ounces corned beef, thinly sliced
5 ounces swiss cheese, thinly sliced
1/3 cup sauerkraut, drained
2 tablespoons thousand island dressing
Directions
Thaw one roll of phyllo, following instructions on package. Unroll and cover phyllo sheets with plastic wrap, then a slightly damp towel to prevent drying out. Place one sheet of phyllo on work surface. Spray lightly with cooking spray. Layer with 4 more sheets, spraying each with cooking spray except the top sheet.
With short side facing you, cover phyllo with 1 layer of corned beef slices, leaving a 1″ border. Similarly, lay swiss cheese on on top of corned beef. Spread sauerkraut evenly on top. Starting at short end, gently roll up phyllo and filling to the end, leaving sides open. (These will fold up as it is placed in fryer pan.) Do not roll too tightly or sandwich will burst. Spray lightly with cooking spray. Using a serrated knife, score the top five or six times. Place in air fryer pan and cook at 375°F for 8-9 minutes or until golden brown. Remove from fryer and serve immediately with thousand island dressing.

No air fryer? No problem. Place sandwich seam side down on baking sheet. Bake in preheated 375°F 20-25 minutes or until golden brown.
