2 packages (15 count, each) Athens® Phyllo Shells
2 large fresh peaches, peeled and 1/2″ diced
2 tablespoons Kahlua
2 tablespoons light brown sugar
1/2 tablespoon orange zest
1/8 teaspoon cinnamon
8 ounces crème de brie (or wheel of brie cut into cubes)
Preheat oven to 375⁰F.
Combine peaches, Kahlua, brown sugar, orange zest and cinnamon in a medium saucepan. Bring to a boil, then reduce heat to a simmer. Simmer for 12-15 minutes or until peaches start to breakdown and mixture thickens.
Spoon crème de brie into phyllo shells filling 1/2 – 3/4 full. Alternately, place one 1/2″ cube of brie into each shell. Top each with peach mixture.
Bake 8-10 minutes and serve.
