Kasseri Spiral Break Apart Phyllo Pie

Tantalize taste buds with bold tangy Kasseri cheese filling wrapped in flaky phyllo dough and infused with hot honey. The perfect balance of flavors to impress your guests.


Ingredients

18 sheets Athens® Phyllo Dough (9″ x 14″), thawed
1/2 cup olive oil
1 1/4 cups milk
2 tablespoons semolina
2 eggs, room temperature
16 ounces Kasseri cheese, shredded
1 teaspoon cracked Black pepper
1/2 tablespoon baking powder
3 tablespoons hot honey + additional for serving
1 tablespoon thyme leaves
1 1/2 tablespoons black sesame seeds, for garnish (optional)

 


Directions

Thaw one roll of phyllo, following thawing instructions on package. Preheat oven to 350°F. Lightly brush a 10″ glass pie pan with olive oil.

Pour milk into a sauce pan and bring to a boil, then whisk in semolina. Reduce heat to simmer and continue whisking 2-3 minutes or until mixture starts to thicken. Remove from heat and allow to cool 3-4 minutes. Whisk in eggs, one at a time, until incorporated. Stir in kasseri until melted and mixed in. Add pepper and baking powder, stir and set aside.

Unroll and cover phyllo sheets with plastic wrap, then a slightly damp towel to prevent drying out. Place a stack of three phyllo sheets on work surface, lightly brush top with olive oil. Fold stack in half lengthwise. Position phyllo with long side towards you. Put approximately 1/3 – 1/2 cup of filling lengthwise down the center leaving about ¾” at either end for tucking. Fold phyllo over filling and gently roll to form a “snake”. Lay seam side down in a 10” shallow, pie pan, along edge. Repeat process 5 more times with remaining phyllo and filling, tucking under the ends and coiling the “snakes” towards the center. The last piece may need to be shortened to fit in center. Brush pie with olive oil. Bake for 45-50 minutes or until golden brown. Remove from oven and immediately drizzle with hot honey, sprinkle with thyme and sesame seeds (if using). Allow to cool at least 5 minutes before cutting and serving. Pieces of coil easily break off or cut off and can be eaten as appetizers with tooth picks or cocktail forks.
