Description
If the heat is sweltering, you have to serve this chilled dessert. These pudding cups with strawberries and kiwi will be a big hit at the pool party, backyard barbeque or any summer get-together.
Ingredients
- 1/2 cup low fat vanilla pudding
- 2 tablespoons drained, crushed canned pineapple
- 2 tablespoons small diced strawberries
- 1 package (15 count) Athens® Mini Phyllo Shells
- 1 whole kiwi, peeled, sliced, and each cut into eighths, for garnish
Directions
In a small bowl, combine pudding, pineapple and strawberries. Chill for 1 hour. Spoon 1 rounded teaspoon of filling into each Phyllo shell. Garnish with sliced kiwi. Serve immediately.
