Featuring the staple flavors of the drink for which this dessert is named — lime and even a touch of tequila — these bite-sized Mini Phyllo Shell treats bring some added fun to the party.
- 1 1/2 cups mini marshmallows
- 2/3 cup half and half
- 1 teaspoon lime zest
- 2 tablespoons lime juice
- 1/3 cup tequila
- 2 tablespoons Cointreau or triple sec
- 1 cup heavy cream
- 5 teaspoons sugar
- 3 packages (15-count each) Athens Mini Phyllo Shells
In a medium-size saucepan, combine marshmallows and half and half. Cook over medium heat, stirring occasionally, until the marshmallows are melted. Set pan in ice bath to cool. Remove from ice bath and mix in zest, lime juice, tequila, and Cointreau. Set aside.
In a large bowl, whip cream and sugar together until soft peaks form. Gently fold in marshmallow mixture until completely incorporated.
Spoon or pipe 1 tablespoon of filling into each shell. If desired, garnish with additional lime zest.
Freeze and serve frozen.
