These bite-sized Mini Pumpkin Pie Phyllo Bites from our friend Lyana are perfect for family gatherings and the holiday season. They’re irresistibly delicious, with flaky custard complimenting the pumpkin filling. They can be served as appetizers or desserts for all your holiday spreads!
- 1 cup canned pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
- 2 packages (15 count, each) Athens® Phyllo Shells
- Zest of 1 orange
- 1 tablespoon pumpkin spice, plus extra for topping
- 2 tablespoons coconut sugar
- 2 tablespoons coconut milk
- 1/2 cup almond flour
Optional: Whipped cream
Preheat oven to 350°F. In a large bowl, whisk one egg, add coconut sugar, and mix until the sugar is fully dissolved. Add the remaining ingredients and mix well until everything is fully incorporated.
Fill the phyllo shells with the pumpkin filling. Bake for 20 minutes. Remove and let them cool completely.
Top with whipped cream, extra pumpkin spice, and serve immediately.
