Mushrooms with Smoked Mozzarella

Mushrooms and smoked mozzarella cheese are the stars of this elegant and meat-free Mini Phyllo Shell appetizer.

  • 2 teaspoons canola oil
  • 1/2 teaspoon minced garlic
  • 1 1/2 cups mushrooms, small diced
  • 2 tablespoons onions, small diced
  • 1 teaspoons capers
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon dried leaf thyme
  • 2 tablespoons red wine
  • Dash of salt and pepper
  • 1 package (15 count) Athens® Phyllo Shells
  • 3 tablespoon shredded smoked mozzarella


In a small skillet heat oil, add garlic and saute for 1 minute. Add mushrooms, onions, capers, Worcestershire, and thyme. Saute for 3-5 minutes. Add red wine and simmer until liquid evaporates. Season with salt and pepper. Spoon 1 rounded teaspoon of filling into each Phyllo Shell. Top with 1/2 teaspoon of mozzarella cheese. Bake in preheated 350ºF oven for 5 -8  minutes or until cheese starts melting. Serve warm
