Ingredients
  • 40 sheets Athens® Phyllo Dough (9″x14″), thawed
  • 1 cup unsalted butter, melted
  • 4 tablespoons olive oil
  • 1 1/2 pounds medium shrimp, shelled
  • 3 banana peppers, cut into rings, seeded if desired
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 2 Roma tomatoes, diced
  • 8 ounces feta cheese, cubed

Directions

Place phyllo on the work surface and cut widthwise into 1/4-inch wide strips using a pizza cutter or a sharp knife. Separate phyllo strips with fingers. In a large bowl, toss phyllo strips with melted butter. Divide phyllo strips into 4 portions and form each one into a roughly 8-inch wide circle on the baking sheets. Press an indentation into the center of each “nest.”
Bake phyllo nests in a preheated 400°F for 12 – 15 minutes, or until golden brown. Meanwhile, in a large skillet, heat olive oil over medium-high heat. Add shrimp and sauté shrimp until opaque. Add sliced peppers and garlic and cook until peppers begin to brown. Add lemon juice and stir to coat. Season with salt and pepper to taste.
To serve, top each phyllo nest with a quarter of the shrimp mixture and sprinkle with tomatoes and feta cubes.
