Pizza Oven – Stuffed Crust Phyllo Pizza

Can you say magnifico? Who knew a pizza oven could add so much flakey delicious flavor? Phyllo layered with parmesan and stuffed with cheese makes for a most incredible pizza crust. Top it with sausage, pepperoni, mushrooms and herbs then bake in a Pizzeria Pronto Outdoor Pizza Oven!


Ingredients

10 sheets Athens® Phyllo Dough (9″ x 14″), thawed
1 egg white
3 tablespoons olive oil, divided
1 1/2 tablespoons water
1/4 cup parmesan cheese, grated
4 sticks string cheese
1 tablespoon garlic, minced
1/3 cup pizza sauce
8 ounces fresh mozzarella
1/4 cup sausage crumbles, such as Jimmy Dean Fully Cooked
20 slices pepperoni
1/2 cup mushroom slices
1/2 tablespoon dried oregano flakes
1/2 cup fresh basil, chiffonade
cornmeal for pizza peel


Directions

Thaw one roll of phyllo, following thawing instructions on package. Preheat pizza oven to 750ºF.

Cut each stick of string cheese in half lengthwise and then cut each piece in half crosswise (yielding 16 pieces). Set aside.

In a small mixing bowl, whisk together egg white, 2 tablespoons olive oil and water. Unroll and cover phyllo sheets with plastic wrap and then a slightly damp towel to prevent drying out. Place one sheet of phyllo on work surface and lightly brush with egg white mixture. Sprinkle 1/2 teaspoon of parmesan evenly on phyllo sheet and layer with a second sheet. Layer two more sheets of phyllo in the same manner across the first making a plus sign. Repeat procedure with three sheets diagonally and three sheets on opposite diagonal. The phyllo should now resemble spokes on a wheel. Reroll unused sheets and follow storing instructions on package. Lay string cheese pieces parallel to edge of phyllo in a circle approximately 1″ from the edge. Fold/roll phyllo over the string cheese pieces and tuck under creating a “stuffed crust”. Brush with olive oil. Mix garlic with pizza sauce and spread over phyllo. Top with mozzarella, sausage, pepperoni and mushrooms. Sprinkle with oregano and basil.

Sprinkle pizza peel with corn meal. Slide peel under pizza and place in pizza oven. Bake 6 minutes. (If pizza is not baking evenly, remove pizza from oven after 3 minutes, turn and bake for additional 3 minutes.)
