Description
An easy southwestern appetizer that may just become your new favorite! Phyllo shells loaded with black beans, jalapeño, bell peppers, cheese, and corn.
Ingredients
- 4 packages (15 count, each) Athens® Phyllo Shells
- 15-ounce can black beans, drained
- 11-ounce can Mexican style corn or southwest style corn, drained
- 15-ounce jar Alfredo sauce
- 12 ounces cream cheese, softened
- 1/2 cup fresh cilantro, chopped
- 1 fresh jalapeno, seeded and finely chopped
- 1/2 red bell pepper, seeded and finely chopped
- Additional cilantro for garnish
Directions
In a large bowl mix all ingredients together and fill each shell.
Bake in a preheated 350°F oven for 5-8 minutes or until hot. Garnish with cilantro and serve immediately.
