Rotisserie chicken and veg- a little sweet, a little sour, this Chinese inspired quick and easy light lunch or snack is delicious.
½ cup frozen tri-color peppers and onions
1 cup rotisserie chicken, shredded
½ cup pineapple tidbits, drained
¼ cup sweet and sour sauce
2 packages (15 count, each) Athens® Phyllo Shells
In a medium sauté pan over high heat, cook pineapples, peppers and onions three minutes or until pineapples start to caramelize. Stir in chicken and sweet and sour sauce. Lower heat to medium, stirring and cooking additional 2-3 minutes or until heated through. Spoon into phyllo shells.
Serve and enjoy.
