Ingredients
- 2 packages (15 count, each) Athens® Phyllo Shells, thawed
- 1 cup dried fruit (any combination of pineapple, apple, dates or apricots), chopped
- ¼ cup flaked coconut
- ¼ cup dried cranberries
- ½ cup brandy, rum or orange juice
- ¼ cup corn syrup
- 2 cups cookie crumbs (gingersnaps or graham crackers)
Directions
In a small bowl, stir dried fruit and coconut with brandy, rum or juice. Let stand for one hour.
In a medium bowl, blend corn syrup and cookie crumbs.
Stir fruit mixture in with syrup; combine well.
Spoon filling into each phyllo shell and press slightly to flatten.
Garnish with extra coconut if desired.
Tips
For added crispness, preheat oven to 350ºF. Place empty shells on a baking sheet and bake for 3-5 minutes. Cool and fill.
