Description
This phyllo-ized Reuben goes classy. Corned beef, dressing, kraut and Swiss cheese all swirled-up in light crunchy phyllo dough.
Ingredients
1 roll Athens® Phyllo Dough (9″x14″), thawed
cooking spray
3/4 pound corned beef, cooked, shaved (approx. 2 3/4 cups)
1 cup Russian or Thousand Island Dressing
1 cup sauerkraut, drained well
1 1/3 cups Swiss cheese, shredded, divided
2 teaspoons caraway seeds
Directions
Thaw one roll of phyllo, following thawing instructions on package. Preheat oven to 375°F.
Coarsely shred corned beef into a medium bowl. Add dressing and toss/mix to coat corned beef well. Mix in sauerkraut and 1 cup Swiss cheese. Set aside.
Unroll and cover phyllo with plastic wrap, then a slightly damp towel to prevent drying out. Lay one sheet of phyllo horizontally on work surface. Lightly spray with cooking spray and layer with another sheet of phyllo. Spread 1/3 – 1/2 cup filling mixture evenly over phyllo. It is okay for some phyllo to show through. Layer with one sheet of phyllo and lightly spray with cooking spray. Crinkle/fold accordion style to create a filled strip approximately 3″ x 14″. Place inside a 9″- 10″ round baking dish along the edge. Repeat process with remaining phyllo and filling, coiling snuggly in the baking dish as you go. Spray pie lightly with cooking spray. Sprinkle with caraway seeds. Bake for 20 minutes. Remove from oven, sprinkle with remaining Swiss cheese and return to the oven. Continue to bake for 15 minutes or until phyllo is golden brown.
Remove from oven and allow to rest for 5 minutes. Serve warm and enjoy.

Tips
TIP:
-When spreading filling on phyllo, it is fine to have some phyllo showing through. Try to avoid large lumps of filling as that will make crinkling/folding the phyllo difficult.
