Apricot Granola Cups

Brighten up the beginning of your day with this quirky combo of apricot and lavender. Ready in under 10 minutes, your mouth and morning routine will thank you. Recipe & photo by food photographer Doaa Elkady (@asoulfulkitchen).

  • ⅓ cup Greek yogurt
  • 2 tablespoons honey
  • ½ teaspoon lavender flowers
  • 2 packages (15 count, each) of Athens® Phyllo Shells
  • 1/3 cup granola
  • 2-3 apricots, chopped
  • Salt, to taste
  • Extra honey and lavender for garnish


Combine the Greek yogurt with honey and lavender flowers.

Spoon 1 teaspoon of the yogurt into each phyllo shell. Add 1 teaspoon of the granola, followed by a teaspoon of chopped apricots. Garnish with extra honey and lavender flowers, if desired, as well as a sprinkling of flaky salt.

  • To pick a ripe apricot, look for one that is fuzzy and soft and has a deep orange or yellow hue.
