Avocado toast just got bite-size cute! Avocados, tomatoes, toasted sesame seeds tucked in a toasty phyllo shell.
Add your personal touch to these power house, yummy snacks.
- 2 packages (15 count, each) Athens® Phyllo Shells
- 2 Hass avocados
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 10 cherry tomatoes, sliced
- 1/4 teaspoon cracked black pepper
- 1 tablespoon sesame seeds, toasted (or other toppings as desired)
Preheat oven to 350°F. Place empty shells on a baking sheet and bake for 3-5 minutes, or until toasted to a light brown.
Peel and dice avocados to 1/4″-1/2″ pieces and place in a small bowl. Using a spoon, coarsely mash most of the avocado, leaving some of the pieces. Add lemon juice and salt, gently mixing until combined.
Place one slice of tomato in each phyllo shell, then spoon avocado mixture on each. Top with freshly cracked black pepper and a sprinkle of sesame seeds, or your favorite avocado toast topping.
Serve immediately and enjoy.
