A fruity, flavorful and creamy blend of chicken, mango, cream cheese, green onions and cilantro in phyllo purses. Cook them to crispy perfection in your air fryer!
12 sheets Athens® Phyllo Dough (9″x 14″), thawed
4 ounces cream cheese, softened
1 cup mango, ripe, peeled and 1/2″ diced
1/2 teaspoon lime juice
1/4 cup cilantro, chopped
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/2 cup green onions, white and green parts, 1/4″-1/2″ sliced
1 1/2 cups rotisserie chicken, shredded
Thaw one roll of phyllo, following instructions on package.
In a large bowl, thoroughly combine cream cheese, mango, lime juice, cilantro, salt and ginger. Mix in green onions and chicken.
Unroll and cover phyllo sheets with plastic wrap, then a slightly damp towel to prevent drying out. Reroll unused sheets and follow storing instructions on package. Place one sheet of phyllo on work surface. Spray lightly with cooking spray. Layer with 3 more sheets, spraying each with cooking spray. Using a pizza cutter or sharp knife, cut in half lengthwise and then cut each strip in thirds crosswise yielding a total of 6 approximately 4 1/2″ squares. Repeat process with remaining phyllo.
Lay squares on work surface. Spoon 1 heaping tablespoon of filling onto the center of each square. Carefully pull corners up over filling, tucking in excess phyllo as you go. Gently squeeze top together and twist slightly to form purses.
Place purses in air fryer pan, approximately 1/4″ apart. Cook in preheated 350ºF air fryer 5-7 minutes or until golden. Garnish with cilantro or green onions. Serve immediately.

No air fryer? No problem. Place purses on a baking sheet. Bake in preheated 375°F oven 20-25 minutes or until golden brown.
