Ingredients
- 1/2 cup mashed potatoes
- 1/4 cup finely chopped red pepper
- 1/4 cup garbanzo beans
- 1 tablespoon small diced jalapeÒo peppers
- 1/2 cup finely chopped tomato
- 1 tablespoon chopped cilantro
- 1/2 teaspoon hot sauce
- 1/4 teaspoon salt
- 1 teaspoon lemon juice
- 1 package (15 count) Athens® Mini Phyllo Shells
- 15 fresh cilantro leaves, for garnish
Directions
In a medium skillet, combine potatoes, red peppers, garbanzo beans and jalapeño peppers and saute for 1 minute. Add tomato, cilantro, hot sauce and salt and saute for 1 minute. Remove from heat and drizzle with lemon juice. Place 1 rounded tablespoon of mixture into each Phyllo Shell and garnish with a cilantro leaf. Serve immediately.
