Mini BLT Phyllo Shells

Bacon, lettuce and tomatoes meet the fabulous phyllo shell. Easy, fast and delicious, bite size BLTs with a crispy phyllo crunch!


Ingredients

2 packages (2.1 ounce ea.) fully cooked sliced bacon
2 packages (15 count, each) Athens® Phyllo Shells
1 cup Boston or Romain lettuce, thinly shredded or chiffonade
20-30 cherry tomatoes, assorted colors
Assorted toppings for garnish such as: flavored mayonnaise, aioli & ranch dressing


Directions

Preheat oven to 350F.
Carefully remove bacon strips from packaging, separating each. Loosely roll one piece of bacon and place in phyllo shell with the bacon lining the shell and the center left open. Set on a baking tray. Repeat process with remaining shells. Bake for 3-5 minutes or until bacon crisps.
Using a sharp knife, cut tomatoes in halves or quarters, depending on size. Sprinkle a bit of lettuce inside bacon opening and top with a piece of tomato.
Serve with a selection of toppings.

Tips

-For convenience and easy clean up, this recipe uses fully cooked bacon which can be found in most grocery stores.
-Try creating a BLT bar at your next gathering. Many flavors of mayo and sauces are now readily available in squeeze bottles. These are perfect for a BLT bar. We used chili lime mayonnaise (for a spicy kick), regular Mayo and ranch dressing.
