Make it Fabulous with Phyllo Recipe Contest Entry


Ingredients
  • 1/4 cup coconut oil (solid form)
  • 1/4 cup butter
  • 1 egg
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons vanilla
  • 1 cup flaked coconut
  • 1 roll Athens® Phyllo Dough (9″x14″), thawed
  • Olive oil cooking spray
  • 1 tablespoon powdered sugar, for dusting
  • 1 tablespoon unsweetened cocoa powder, for dusting

Directions

Thaw one roll of phyllo, following thawing instructions on package. Preheat oven to 350°F.

In a medium bowl mix, using hand mixer, combine coconut oil and butter until smooth and well blended. Add egg, sugar, cocoa powder and vanilla. Blend well. Stir in flaked coconut. Set aside.

Unroll and cover phyllo sheets with plastic wrap, then a slightly damp towel to prevent drying out. Lay one sheet of phyllo dough on dry work surface. Lightly spray with olive oil spray, and dust with cocoa powder. Layer three more sheets of phyllo, leaving the top layer without spray or cocoa powder.

Using a pizza cutter or sharp knife, cut the phyllo stack in thirds horizontally and in half vertically, creating six squares.
Place 1 tablespoon of the filling in the middle of each phyllo square. Pick up and bring up sides of phyllo around filling, lightly squeezing in the middle & lightly flattening the bottom, so it will stand upright on it’s own. It should look like a purse. Place on an ungreased baking sheet about one inch apart. Repeat process with remaining phyllo and filling.
Bake in preheated  oven for about 10 minutes or until golden brown. Cool completely and dust with powdered sugar and coca powder.
