Spring Veggie Tofu Phyllo Tart

Fresh colorful spring veggies are arrayed on a bed of creamy flavorful tofu balanced with a light flaky phyllo crust. This lovely tart takes on an Asian flare with ginger, sesame, peanuts and Thai sweet red chili sauce.


Ingredients

8 sheets Athens® Phyllo Dough (9″x14″), thawed
1 package (16 ounce) silk tofu, well drained
2 tablespoons corn starch
2 cloves garlic, minced
1/2 cup sesame oil, divided
1 1/2 teaspoons soy sauce
1 teaspoon ginger root, grated
9 spears asparagus, thin
1/2 cup shitake mushroom slices
1/4 cup green onion slices
1/2 cup sweet pepper slices
2 tablespoons peanuts, finely chopped
3 tablespoons Thai sweet red chili sauce


Directions

Thaw one roll of phyllo, following thawing instructions on package. Preheat oven to 375°F.

Combine tofu, corn starch, garlic, 2 tablespoons sesame oil, soy sauce and ginger in a blender. Blend 45 seconds – 1 minute or until smooth and creamy. Set aside.

Lightly brush 9″ removable bottom tart pan with sesame oil and set on baking sheet. Unroll and cover phyllo with plastic wrap, then a slightly damp towel to prevent drying out. Place two sheets of phyllo in pie pan, gently pressing down and with excess evenly hanging over either side. Lightly brush with sesame oil and sprinkle with some sesame seeds. Lay 2 more sheets of phyllo across the first two making a plus sign. Lightly brush with oil and sprinkle with sesame seeds. Lay 2 phyllo sheets diagonally across pan, brush with oil and sprinkle with sesame seeds. Lay 2 sheets of phyllo diagonally opposite. The phyllo in the pan should now resemble spokes on a wheel. Trim overhang to about 1 1/2″ – 2″ all the way around. Brush lightly with oil. Spread tofu mixture evenly over phyllo. Place vegetable slices attractively over filling. Bake 40 minutes or until filling is firm and vegetables start to char slightly around edges.

Remove from oven, sprinkle with peanuts and allow to rest for 5 minutes. Remove from pan, drizzle with sweet red chili sauce. Slice and serve warm.
