Global Flavors

Even if you haven’t traveled in a while, you can still take your taste buds on a trip across the globe. We think flavor fusions from around the world are going to be one of the biggest trends of the year … and we can’t wait to try them for ourselves. Here are some global recipes that we’re whipping up.

Warming spices like garam masala, cinnamon and allspice take center stage in these recipes. Layers of ground beef and flaky phyllo create a hearty Egyptian goulash that’s perfect for cold winter nights. Moroccan lamb and couscous is another classic pairing that gets a crispy lift from a phyllo ramekin. And for a stunning end to your meal, make a berry-studded Om Ali, a bread-pudding like treat that’s considered the national dessert of Egypt.

By replacing puff pastry with phyllo, you can retain the flaky layers that are essential to French cuisine … and cut down on the fat. Need a showstopping dessert? We love this apricot tarte tatin and this espresso cream filled napoleon. For a savory app that draws inspiration from the flavors of French onion soup, try these mini tarts.

From sunup to sundown, street food brings the heat… and satisfies the appetite. Start the day right with guava and cream cheese pastelitos for a tropical turnovers. For a quick lunch these Italian meets South American meatball empanadas hit the spot. Want a lighter bite? Ceviche is commonly found along the coast in Ecuador and Peru — our version houses everything in a phyllo shell for easy snackability. And for a Mexican classic made even more portable, our chipotle chicken mini tostadas are a total crowd-pleaser.

Greek food is so much more than feta cheese and kalamata olives (no shade). If you want to transport your kitchen to the birthplace of all things phyllo, we think these sweet potato and beef burekas are just the place to start. End the night with portokolopita, an orange phyllo cake that makes excellent use of winter citrus.
